The Monastrell grapes from Jumilla, Spain, that were used in this wine were intentionally harvested slightly over ripe, but while still in good health. These grapes were then left out under the sun in order to create a higher concentration of natural sugars from the grapes. After this process is completed, the Monastrell grapes are brought to the winery where they are very delicately pressed and dehydrated. Casa de la Ermita then adds resistant yeasts to secure even higher levels of natural sugar production by the grapes before fermentation. In the fermentation process, when the temperature reaches 58 ºF (14.5 ªC) the temperature is then brought down to stop the fermentation.
