Riesling wines, not unlike most other white wines, are often consumed when young. In winemaking, the delicate nature of the Riesling grape requires special handling during harvesting to avoid crushing or bruising the skin. Riesling is often put through a process of cold stabilization, where the wine is stored just above its freezing point. The wine is kept at this temperature until much of the tartaric acid has crystallized and precipitated out of the wine. This helps prevent crystallization of the acid (often called wine diamonds) in the bottle. After this, the wine is filtered again to remove any remaining yeast or impurities.
Riesling is a versatile wine for pairing with food, because of its balance of sugar and acidity. It can be paired with white fish or pork and is well known as a great pair for Asian cuisine. St. Clair Riesling is a great wine for summer refreshment. Buy here

Casa de la Ermita Dulce Monastrell from the Casa de la Ermita winery is a Spanish dessert red wine that has been crafted without additives, added alcohols, or added sugars. The Monastrell grapes from Jumilla, Spain, that were used in this wine were intentionally harvested slightly over ripe, but while still in good health. These grapes were then left out under the sun in order to create a higher concentration of natural sugars from the grapes. After this process is completed, the Monastrell grapes are brought to the winery where they are very delicately pressed and dehydrated. Casa de la Ermita then adds resistant yeasts to secure even higher levels of natural sugar production by the grapes before fermentation. In the fermentation process, when the temperature reaches 58 ºF (14.5 ªC) the temperature is then brought down to stop the fermentation. This Spanish dessert wine Casa de la Ermita Dulce Monastrell is then aged for three months in oak barrels before it is bottled.
This red dessert wine Casa de la Ermita Dulce Monastrell has medium high aromatic intensity with loads of red and black fruit aromas, very ripe wild blackberries, and slightly spicy notes that are all entwined by a background of bay leaf and red peppers.
This Spanish dessert wine Casa de la Ermita Dulce Monastrell is perfect for those who like to be surprised by wine. We were pleasantly surprised by the retronasal olfaction qualities of this wine that is very sweet with a cooling finish.

Dessert wwine from Croatia Desertno vino iz HrvatskeProšek is the most well known Croatian dessert wine. Despite its name it has nothing to do with the Italian Prosecco, which is a sparkling wine. There are no similarities between the products either with regards to production method, style or the grapes used, nor is there any relation between the origins of the two names. Prošek is more likely to compare with the (less known) Italian dessert wine Vino Santo (holy wine). These are straw wines since they are produced by drying the freshly harvested grapes on straw mats in a warm and well ventilated area of the house. This is the same style of production in Croatia. The composition is typically of Bogdanuša, Maraština or Vugava (all native Croatian white grapes) with higher-end versions being a blend of the base white grapes and Plavac Mali (a red Croatian grape). Prošek is a sweet dessert wine that is traditionally from the southern area of Dalmatia. It is usually much more expensive than other wines due to an average of seven times more grapes being needed to make the same amount of wine. 041b061a72
