I am a huge chocolate and cacao fan and trying their product was like a balsamic to the soul and body. The people who attended me were kind and welcoming. I took home some cacao paste and when I ran out, I was a bit sad because it was really giving me so many benefits. Little did I know that they shipped to Puerto Rico and as soon as I found out, I had to order. Its now part of my routine and a true blessing to appreciate this beautiful tradition. Yet the relationship is very real, because those cocoa nibs actually become chocolate, with the addition of some sugar and maybe milk. This is because cacao nibs are just crushed cocoa beans, which are the only ingredient in chocolate from a legal standpoint.


Cacao nibs are pieces of cacao beans, the material from which chocolate is made. These beans are in reality the seeds of the Theobroma cacao tree, a tropical plant native to South America, whose fruits grow directly on the trunk and branches of the tree. Each pod contains a few dozen seeds, and their outsides change color when ripe.


Many companies these days are also just sourcing cacao from a large supplier, checking a box to order organic or not, and then repackaging the nibs with their own logo. Technically you are getting what you paid for, but low quality cacao nibs can taste overwhelmingly bitter, acidic, and flat, lacking the complexity of a high quality nib.


Cacao nibs are different from chocolate in more than just the sugar and dairy departments, however. When grinding cacao nibs into chocolate, over the first several hours they release a number of volatile acids that were formed during the fermentation process.


There are dozens of uses for cacao nibs, but how you choose to consume them is up to you. Organic cacao nibs are usually the best choice in the supermarket, but if you can buy cacao nibs or even whole cocoa beans from a local chocolate maker, the quality is usually better.


There are much better uses for cacao nibs, such as replacing a portion of the nuts or chocolate chips in some recipes, though each recipe needs to be tweaked individually. Unlike cocoa powder, cocoa nibs still contain roughly half fat (in the form of cacao butter).


Not only does pure cacao contain a high amount of antioxidants plus magnesium, iron, and other minerals. It also features theobromine, a mildly stimulating compound different than caffeine because sensation is less jittery and it doesn't lead to crash or cravings.


For thousands of years the indigenous cultures of Latin America have also regarded cacao as sacred and a way to connect with the divine. The influx of Europeans led to different production methods including roasting at high heat and removing the healthy cacao butter.

Attention: We do not add emulsifiers to our Cacao. This may lead to the naturally occurringfats in the Cacao to separate from the solids and create white spots or a thin white layer on your cacao. This is called blooming and is normal. The properties of the cacao remain intact and its quality does not change.


1) Candied Cacao Nibs - For a sweeter version of cacao nibs, heat 1 part cacao nibs, 1 part water, and 2 parts sugar in a skillet over medium heat. Continue cooking until sugar melts to a deep amber color. Stir in 1/2 part butter. Transfer the mixture to a baking pan and let cool. Enjoy as a topping for ice cream or just a sweet treat.


2) Chocolate-y Energy Bites - Combine 1 cup dates, 3 tablespoons almond butter, 1/4 cup cacao nibs, 2 tablespoons cacao powder, and 2/3 cups rolled oats in a food processor. Pulse until combined. Roll into 1-inch balls, and set in the fridge until firm. Makes about 15 bites.


3) Cacao Chia Pudding - Whisk together 1 1/2 cups almond milk, 1/3 cup chia seeds, 1/4 cup cacao powder, 1 tablespoon cacao nibs and 1/4 cup maple syrup in a large bowl. Pour into individual cups or mason jars. Set them in the fridge overnight. Serve chilled with your favorite toppings the next day!
